Besides adopting drier styles across the board, gentler pressing of the grapes and longer aging on the lees, the real revolution is taking place in the vineyards, with a collective dedication to sustainable practices and organic viticulture. Today, nearly 70% of the denomination’s vineyards are organic (including both certified and certification in progress), making Franciacorta one of the foremost appellations in the world in terms of organic grape vines.
